Ooooh I tried a NEW low-carb recipe tonight and it was DE-LISH! It was pretty simple to prepare and very easy to consume!


As always, I saved this fabulous recipe to my CopyMeThat app (you can find me as Mrs Miracle on CopyMeThat). The original recipe that inspired mine comes from Kayln’s Kitchen and I modified my recipe just a tad bit for my personal liking.

Happy Arrow Sausage Peppers Bake Steps

Sausage and Peppers Low-Carb Cheesy Bake

2-4 tbsp olive oil, divided (or less depending on your pan)
10 links Beer sausage (or Italian sausage)
1 each: red, green, orange, yellow bell peppers, cut into thick strips
1 sweet onion, cut into thick strips
1/2 tsp. Mrs Dash Italian herb blend
1/2 tsp. all-purpose seasoning blend
fresh-ground black pepper and sea salt to taste
2 cups grated Mozzarella (more or less as desired)
1/2 cup Parmesan cheese

Preheat oven to 375F/190C.  Spray a baking dish with coconut oil.

Trim away stem and seeds of peppers and cut into thick strips. Trim onion and cut into thick strips. Mix 2 tbsp oil and seasonings with peppers and onions. Saute peppers and onions in pan over medium high heat for about 5 minutes. (Peppers and onions will cook more in the oven, so don’t overcook if you prefer them slightly crisp in the finished dish.)  Place sautéed onions and peppers into baking dish.

Heat about 2 tbsp olive oil in a large non-stick pan and saute the sausage over medium-high heat, turning occasionally to brown on all sides.  (If you’re using pre-cooked sausage you can skip this step and just cut sausage before you brown it.)
When the sausage is lightly browned on all sides, remove to a cutting board and let cool enough to slice.  Then cut sausage in half lengthwise, cut into thick half-slices, reheat the pan, and brown the sausage again on the cut sides.

Layer the browned sausage over the peppers and onions.

Sprinkle with desired amount of grated mozzarella and parmesan cheese.

Bake about 25 minutes, or until all ingredients are sizzling hot and the cheese is melted and nicely browned. Serve hot.  Leftovers of this can be kept in the fridge for a day or two and reheated in a toaster oven or in the microwave.

This will become another regular in our household.

I’ve always wanted a pool

I’ve wanted a swimming pool my whole life. I have always liked being around water and enjoying a swim or a relaxing day floating in the pool. Growing up I spent most of my summers at the local public pool just about every day that I could convince my parents to take me there. There is a bit of nostalgia for me being poolside. Even when we would take a beach vacation, I preferred being by or in the pool.

I was never successful at getting my pool.  I asked my Dad countless times, “Can I have a pool?” and the answer was always “No.” I do have a couple of classic photos from my childhood, standing next to a kiddie pool (you know the ones, the circular hard plastic blue pool) with a disappointed frown on my face, or a pouty lip, in protest and full display of my unhappiness. That was the best I could get. Since I was never successful at getting my own pool, I frequented the local pool as much as I could and hoped for and dreamed of having my own pool some day.

When my husband and I were dating and getting to know each other he quickly learned of 2 of my greatest desires, since childhood. One was to own a convertible and one was to have a pool. Amazingly, in 2013 we purchased my VW Eos convertible. 🙂 It was incredible. I cherish every moment I get to put the top down and drive around town.

This summer (2016) we were not able to take a vacation as we had intended and my husband surprised me by buying and setting up a pool for our fenced in backyard.  Don’t get too excited for me just yet. Granted it is a pool and that is great.  It is a “starter” pool for us. It is way better than the kiddie pool from my childhood, but it’s not the best or top of the line just yet. He wanted to start out small, and see how we do taking care of a pool. It’s similar to this one (example of our pool). It’s big enough to get a couple of floats in there, and spend some time relaxing and floating all my worries away. Actually, I have found it to provide a way to slow down, relax and just let go. I mean, how many times as adults do we just lay still, look up into the sky, and not have a million things going on. This summer I have found time to just chill and enjoy life.

MechelleMost days I might have an hour in the pool after work (maybe between 5:00 pm – 6:00 pm), or a few hours a day on the weekends.  I have been very conscious this year about what chemicals are in the things we use everyday (read more here). That’s when I began to examine and read about sunscreen.  I have been diagnosed with low levels of Vitamin D and I take a daily supplement. However, what better way than to get the all natural Vitamin D that our Good Lord provides to us for free (read more here). An important note from the article

My Best Suntan

There are only a few possible all natural sunscreens that I may consider using, but have not decided to try them. I made a decision to not use any type of sunscreen while enjoying my pool this summer. I did, however, find a spectacular product that I have come to love this summer. It is a dry oil made from all natural ingredients. It smells so good, feels good and keeps my skin soft and moisturized after sun exposure. I have not allowed myself to “burn” but my skin may get just a little pink before it turns into a tan. I feel like I have My Best Suntan that I have had in years and I have not sacrificed my health but quite possibly improved my health in the process. Getting my Vitamin D via the sunshine has really improved my mood, my Fibromyalgia, my complexion, my skin, and my overall well being.



As you can see from the label of the Just Natural Skin Care Body Nutritive Serum the ingredients are all natural, no chemicals.  I feel safe using this on my body and have had fabulous results from using it. I am now on my 2nd bottle this summer.

The main thing to take away is know what is in the products you are using and be smart about sun bathing and tanning. I don’t over expose my skin to the sun, but I do allow myself time to capture my Vitamin D naturally and now have an awesome tan.

My Stress Buster

Some days need a little help. Today, I needed a little help from my doTerra essential oils. I was feeling a little stressed so I put 2 drops of each oil (Elevation, Bergamot, and Frankincense) into my diffuser and let my stress just melt away. It’s a fun week here in Kentucky. It’s Derby Week! So much going on around the city all leading up to the first Saturday in May, The Kentucky Derby. My favorite way to celebrate used to be to enjoy a Derby Pie or 2 however since I’m not eating sugar or carbs, I won’t be enjoying any this year. 😢 But I may need to have a Mint Julep on Derby Day! Anyway, Happy Derby Week to y’all!

Since today is May 5th I decided I needed to celebrate Cinco de Mayo with an awesome recipe I’ve been wanting to try. Also due to the celebratory week, I have a day off tomorrow, so another reason to celebrate.

Today started with a throbbing headache.  As soon as I woke up this morning I felt the pressure on my forehead.  Not really sure what was going on but my head was aching and I just didn’t feel my best.  After struggling for a while and trying to determine what was wrong, I decided to take action and grabbed my essential oils and rolled on (my forehead) my blend for headaches. My blend is diluted with dōTERRA Fractionated Coconut Oil to minimize any skin sensitivity.

I know, Emotional Intelligence, it’s a deep subject. But I am in constant search to become the best version of me and I am always learning.  I had a couple of articles come across my path recently and I want to share them.

I’ve been implementing and using Essential Oils in my life for over a year now. I must say they are making a tremendous difference in my approach to a natural life. Now that I have some personal experience with doTerra Essential Oils I want to begin sharing more about my favorite ways to use them daily.

My personal favorite that I use every night at bedtime is my blend of Lavender (15) and Serenity (25) to assist with a restful night of deep sleep. I mix 25 drops of Serenity and 15 drops of Lavender and fill the rest of the rollerball with Fractionated Coconut Oil. I rub the blend on my wrists every night. Sometimes I’ll rub some behind my ears or on the bottom of my feet. Lavender is such a pleasant relaxing scent. It has made a remarkable difference in my quality of sleep.
