Ooooh I tried a NEW low-carb recipe tonight and it was DE-LISH! It was pretty simple to prepare and very easy to consume!
As always, I saved this fabulous recipe to my CopyMeThat app (you can find me as Mrs Miracle on CopyMeThat). The original recipe that inspired mine comes from Kayln’s Kitchen and I modified my recipe just a tad bit for my personal liking.
Sausage and Peppers Low-Carb Cheesy Bake
2-4 tbsp olive oil, divided (or less depending on your pan)
10 links Beer sausage (or Italian sausage)
1 each: red, green, orange, yellow bell peppers, cut into thick strips
1 sweet onion, cut into thick strips
1/2 tsp. Mrs Dash Italian herb blend
1/2 tsp. all-purpose seasoning blend
fresh-ground black pepper and sea salt to taste
2 cups grated Mozzarella (more or less as desired)
1/2 cup Parmesan cheese
Preheat oven to 375F/190C. Spray a baking dish with coconut oil.
Trim away stem and seeds of peppers and cut into thick strips. Trim onion and cut into thick strips. Mix 2 tbsp oil and seasonings with peppers and onions. Saute peppers and onions in pan over medium high heat for about 5 minutes. (Peppers and onions will cook more in the oven, so don’t overcook if you prefer them slightly crisp in the finished dish.) Place sautéed onions and peppers into baking dish.
Heat about 2 tbsp olive oil in a large non-stick pan and saute the sausage over medium-high heat, turning occasionally to brown on all sides. (If you’re using pre-cooked sausage you can skip this step and just cut sausage before you brown it.)
When the sausage is lightly browned on all sides, remove to a cutting board and let cool enough to slice. Then cut sausage in half lengthwise, cut into thick half-slices, reheat the pan, and brown the sausage again on the cut sides.
Layer the browned sausage over the peppers and onions.
Sprinkle with desired amount of grated mozzarella and parmesan cheese.
Bake about 25 minutes, or until all ingredients are sizzling hot and the cheese is melted and nicely browned. Serve hot. Leftovers of this can be kept in the fridge for a day or two and reheated in a toaster oven or in the microwave.
This will become another regular in our household.
